Big Flavor, Small Budget: Two Plant-Centered Dinners to Love

Big Flavor, Small Budget: Two Plant-Centered Dinners to Love

Eating well doesn’t require a gourmet budget—or a vow to never eat cheese again. Plant-centered eating simply gives vegetables, beans, fruits, and whole grains more room on your plate, while leaving space for foods such as eggs and dairy. These two satisfying dinners make that approach easy, using familiar ingredients that deliver flavor, variety, and valuable nutrients.

Start with a vegetable-packed frittata, then try a build-your-own taco night. Both recipes welcome substitutions, making them useful for busy evenings and using up ingredients you already have. Frozen vegetables, store-brand beans, and seasonal produce can help keep costs manageable.

Recipe 1: Easy Vegetable Skillet Frittata

Serves 2–3. Enjoy with a side salad.

Ingredients

  • ½ small onion, chopped
  • 1 cup red and green bell peppers, chopped or thinly sliced
  • 4 cups fresh spinach or other leafy greens, chopped—or 1 cup frozen spinach, thawed and drained
  • 1 tablespoon extra-virgin olive oil or canola oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano or basil—or 2 tablespoons chopped fresh herbs
  • 4 eggs

Instructions

  1. Heat the oil in a medium nonstick skillet over medium heat. Add the onion and peppers; cook, stirring occasionally, until softened and lightly browned.
  2. Add the greens and cook until wilted and heated through. Allow excess moisture to evaporate.
  3. Whisk the eggs with the garlic powder, pepper, and herbs. Pour evenly over the vegetables.
  4. Reduce the heat to low, cover, and cook until the eggs are fully set and the center reaches 160°F. Cooking time varies with the skillet and thickness. (fda.gov)
  5. Loosen with a spatula, slide onto a plate, and cut into wedges.

Recipe 2: Build-Your-Own Black Bean Tacos

Serves 3–4 adults, or up to 6 with smaller children.

Ingredients

  • 1 can (15 ounces) no-salt-added black beans, drained and rinsed
  • 1 can (about 15 ounces) no-salt-added corn, drained
  • 2 avocados, diced
  • 1 red bell pepper, thinly sliced
  • 1 tablespoon lemon juice
  • 1 cup salsa, preferably lower in sodium
  • 1 cup shredded cheddar or Monterey Jack cheese
  • ½ cup plain Greek yogurt
  • 8–12 soft corn tortillas
  • ½ cup unsalted pumpkin seeds, optional
  • ½ cup sliced green olives, optional

Instructions

  1. Gently toss the avocado with the lemon juice.
  2. Warm the beans in a saucepan over low heat, adding a splash of water if needed. Warm the corn separately if desired.
  3. Heat the tortillas according to the package instructions or briefly in a dry skillet.
  4. Arrange the fillings in bowls. Let everyone assemble their tacos, starting with beans and vegetables and adding modest amounts of cheese, yogurt, and optional toppings.

These meals make a simple point: nutritious food can be practical, affordable, and worth looking forward to. Give vegetables the starring role—your grocery bill doesn’t need a Hollywood budget.
